Chicken liver pate

Chicken Liver Pate, organic cooking classes, organic workshops

Ingredients

(all organic where possible of course!) organic cooking workshops organic cooking classes

500 grams organic chicken livers organic cooking workshops organic cooking classes

1 onion diced

3 slices of bacon (optional)

1 clove of garlic

250r organic butter

100 ml of white wine (optional) organic cooking workshops organic cooking classes

Herbs such as rosemary, thyme, tarragon, or parsley (optional)

 HOW TO…

Heat 50 gr butter in pan; add onion garlic and sauté for 1 minute add bacon and livers sauté till opaque. Add herbs if selected. Add white and reduce to just a moist consistency. Let cool.

Transfer to blender, add remaining butter and blend till smooth.

Transfer to glass container and refrigerate. organic cooking workshops organic cooking classes

Additional melted butter can be drizzled over the top to preserve color and help to keep the pate from forming a skin on top.

Chicken, asparagus and wild mushrooms in a tamari soy sauce

Ingredients

(Serves 4 – all organic where possible of course!)

6 chicken thighs sliced organic cooking workshops organic cooking classes

2-3 tbsp Coconut oil organic cooking workshops organic cooking classes

2 cups of asparagus organic cooking workshops organic cooking classes

2 cups of mixed wild mushrooms e.g. (shitake, oyster and brown)

2 cloves of garlic

1 tbsp of sliced ginger organic cooking workshops organic cooking classes

100 ml tamari soy sauce organic cooking workshops organic cooking classes

1 bunch of coriander

½ cup of chopped spring onions

 HOW TO…

Heat coconut oil in wok/fry pan

Add garlic and fry 2 mins organic cooking workshops organic cooking classes

Add mushrooms and continue to fry 2 mins

Add chicken and stir fry 3-5 mins

Add snow peas and tamari soy sauce continue to stir fry for a further 2 mins organic cooking workshops organic cooking classes

Serve and garnish with fresh coriander and raw spring onions

Confessions of An Ex-Cortisol Junkie

A while ago I made a decision to quit cortisol. It came when 18 months of a crazy-stupid juggling act between my salary-job, new business Soul Sessions, motherhood and life became all too much.

I was tired, stressed, over-worked and not enjoying my life a whole lot anymore. How are you feeling in your work-life routine? It’s a good opportunity to check in.

As I reached my tipping point, something had to give. After fifteen years of employment, what ‘gave’ was my salary-job as a journalist working for Australia’s largest selling newspaper. I quit, just like that.

What I expected to follow was calm after the storm. What actually came was an enormous need for sleep, some flu-like symptoms, loss of 90 per cent of my taste (so weird) and eventually a diagnosis of adrenal fatigue.

It seems stopping is what allowed my body to reveal what was really going on.

Recognising the need to meet me where I’m at, my Momentum for Life trainer (with a pornstar name) Leila Lutz has taken me off all physical exertion. Why? It cranks up your cortisol levels and puts extra and unwanted stress on the adrenals.

Instead, I’ve been given a new program of C.H.E.K zone exercises to do……..

Cocoa and Banana Balls

Cocoa and coconut balls, organic cooking classes

Ingredients

(all organic where possible of course! )

2 bananas

½ cup of raw almonds soaked in filtered water overnight

2tbsp cocoa powder

½ cup currants

½ tbsp balsamic vinegar

1 cup desiccated coconut for rolling

Method

Chop drained almonds in food processor. Add bananas, currants, carob and vinegar

Place mixture in a bowl and keep adding coconut until mixture is firm enough to roll

Roll balls in lightly toasted coconut and place in fridge to firm before serving.

Elo’s Discovering the Joys of Detox – Greens!

The thing about detoxing is you invariably take a dive before things start to feel better.

Along with many other foods listed here, coffee is off the menu for a while.

Having not had my daily piccollo (x2) since my baked eggs and ham on Sunday morning, my mind and body are starting to feel the pinch.

My head is sore with a mild withdrawl headache, my mind is a little foggy, my limbs a little heavy, I’m a tad spikey emotionally and I’m starting to get the sense that the best place for me right now is at home, away from the world. Wouldn’t want to bite anyone’s head off now, eh?

To take my mind off it, I thought I’d share some of the foods that naturopath-herbalist-nutritionist and cleanse guru Anthia Koullouros has given the green light to. In fact, there are a lot of green foods in there.

It am SO excited.

Soul Sessions is launching in New York later this year (think September) and embarking on a US tour of the best speakers and venues, all to be captured on film for our video library of course. Cities and dates will be announced très soon because all of our friends – that’s you – are invited to gallivant across the U.S. with us too!

In order to stay open to receiving all the amazing treasures the Universe has in store for the Soul Sessions community, I know I need to be firing on all cylinders and be as energetically clean as possible.

With Momentum for Life I’ve done a lot of wonderful work already around cleaning up my diet to be mostly whole foods, grass fed meats and almost no grains. I have continued to drink two coffees a day and alcohol two nights per week (sometimes three), and the time has now come to take the cleaning up to the deeper level of cleanse.

Anthia KoullourosTo do that, I spent some time with esteemed naturopath Anthia Kollouros over the weekend. She is also a homeopath, herbalist, nutritionist and organic and lifestyle educator with 20 years experience… and so, so gorgeous and lovely

How to cook slow roast lamb infused with garlic and rosemary

Here is our Holistic Lifestyle Coach Jo Rushton showing how to prepare this beautiful slow roast lamb dish.

With the chilly weather on it’s way, here’s a nice recipe to keep you warm. Pretty tasty too ;)

Aromatic Coconut Chicken or Salmon Curry

YUM...

Ingredients – all organic where possible of course!

2 Tbsp Coconut oil

6 skinless chicken thigh fillets or 600 gr skinless salmon fillets cut into cubes

1 brown onion diced

1.5 tsp Thai paste

2 x 270ml coconut milk (Ayam brand)

¼ whole Pumpkin chopped

2 cups broccoli cut into florets or green beans

Coriander to garnish

 

Heat Coconut oil in sautés pan and add Thai paste, infuse for a minute and then add onions, sauté for 2 mins and then add chicken, stir to infuse with spice and seal the chicken, mix through the pumpkin and transfer into slow cooker.

Cook on low 4 hrs (add chosen green veg ½ hr before serving)

Serve with quinoa and garnish with fresh coriander leaves.
